Ingredients:
3 Oxtails - pre-cut by grocer
Ginger root - 1" in dia. 2" long peeled & sliced
Onions - 2 medium size sliced
Soy Sauce - 1/2 cup dark & 1/2 cup light
Cooking wine -3/4 cup
salt - 1 tsp
Brown sugar - 1/8 cup (or Syrup - 3T)
Tomatoes - 2 medium size sliced
Procedures:
1. Cover 3/4 height of the oxtails with water in pot. Use high heat to bring water to boil on stove. During heating, use a large long arm spoon to move oxtails around every 5 minutes to allow even heating of the oxtails.
2. Let the pot cool down for 1 hr. Discard boiled water & rinse oxtails clean.
3. Add oxtails, ginger root, onions, soy sauce, cooking wine, & salt to the pot. Use medium heat to brown the oxtails for 10 min. Use a large long arm spoon to move oxtails around.
4. Add water to 3/4 height of the oxtails & continue to use medium heat for approx. 2 hrs. Use a large long arm spoon to move oxtails around every 10 minutes to prevent the bottom oxtails from getting stuck to the pot.
5. When oxtail meat starts to come off from the oxtail bones add brown sugar (or syrup) & tomatoes.
6. Continue to use medium heat & move oxtails around for another 1/2 hr. or until water thickens to be glazed sauce.
7. Serve hot with rice.
8. Reheat leftover oxtails on stove. Great to serve with noodles in soup & spinach.
